Note on Kitchen knives: I sharpen more kitchen knives then anything else. I see a wide quality/price range of knives. Basically nearly all are worth a good sharpening. Occasionally I'll get one that is not worth the full work-up so I get it reasonable and refund a buck or two. So don't hesitate to bring me any knife that you use.

Many people wash their knives in the dishwasher. Especially after I sharpen them it is best to hand wash them and put them away when you are done using them. In the dishwasher they are hitting against other metal and dull much faster. plus the pressure will get water inside handles and degrade their appearance faster.

A final thought on kitchen knives. Using sharp knives is very natural and easy to do. The thought of it scares many people because then envision the effort require for a dull knife put into a sharp knife. But it a whole different method. There is some risk of cutting yourself when first learning to handle sharp knifes, but you get the hang of it very quickly and it makes food preparation much more enjoyable.
